Wax basically seals in all your hard work. It's a sealant that protects the paint from the elements. Gloss protection goes on first and is then protected by the wax. The gloss protection or glaze (finally did some reading up on that subject!) enhances the look created by the polish and then wax helps the whole thing to last longer and be protected from the elements.

The reason why you shouldn't apply to new paint work is to give it a chance to properly oxidise and set but this only really goes for cars that have had a recent respray etc. A brand new car will already have been waxed as part of it's prep before it's handed over to you so you can wax it as soon as you like.
